Mexican Hominy Casserole

As easy as it is delicious, this casserole combines several ingredients that taste great together:
hominy, cheddar cheese, green chiles and sour cream.


1 medium white onion, chopped
1 garlic clove, minced
1 tablespoon cooking oil
1 cup (8 oz) sour cream
¼ cup milk
1 (4 oz) can chopped green chiles
¼ tsp ground cumin
¾ cup shredded cheddar cheese (divided use)
1 (25 oz) can Juanita’s Mexican Style Hominy, drained


Preheat oven to 350ºF. In a small skillet, cook onion and garlic in oil until tender. Remove from
heat. In a medium-size bowl, combine onion mixture, sour cream, milk, chiles, cumin and half the
cheese. Add Juanita’s Mexican Style Hominy and mix well. Pour into a greased 2 quart baking
dish. Bake, uncovered, for 30 minutes or until heated through. Sprinkle with remaining
cheese and continue baking 1-2 minutes until melted. Remove from oven and serve immediately.
