Hominy Cheese Casserole


8 pieces bacon, diced
1 cup chopped onions
1 (25 oz) can Juanita’s Mexican Style Hominy, drained
1 tablespoon flour
2 large ripe tomatoes, diced
1 tsp cayenne pepper
¼ tsp salt
¼ tsp black pepper
2 cups Cheddar cheese, grated (divided use)
½ cup red bell peppers, diced
½ cup green bell peppers, diced


Heat oven to 350ºF. Cook bacon in fry pan until done; remove to drain. Add onions to bacon
drippings; cooking until tender. In large bowl, combine bacon, Juanita’s Mexican Style
Hominy, flour, tomatoes, cayenne, salt and pepper. Add 1 cup cheese; mix well. Spread
mixture into lightly greased 9×12 pan; bake for 25 minutes. Remove, add remaining cup of
cheese, sprinkle bell peppers on top and return to oven for 5 more minutes or until cheese is
melted and bubbly.
